Quick and Easy Healthy Pancake Recipe
We’re always on the run, and sometimes we want a healthy breakfast but don’t necessarily want to eat tasteless bland food. This is a quick and easy Healthy Pancake Recipe that you can make in under 3 minutes of prep and can last for days….
Normally in our blog we don’t advertise any products for companies, and I want to be clear we’re not. This is just my favorite Healthy Pancake Recipe and anyone that’s had them raves about them. Ingredients: pancake mix-I start with Grain Berry Pancake Mix- – Inexpensive, GMO free , real grains-2 grams of protein, and 2 grams of fiber PER pancake. I also mix it with Met-Rx Original Buttermilk pancake mix. Here’s what else we will need to make 20-24 pancakes:
- Pre-Heated Griddle
- 1 1/2 Cups Skim Milk
- 2 Large Eggs
- 1.5 Tablespoons of Grapeseed oil (Extra Virgin Olive Oil can work too)
- 2 Cups Pancake Mix Combination
- Bowl for mixing
- Large Cup
- Plastic Wrap
- Ground Cinnamon
- Variation- slice 4 ounces of your favorite fruit
Here are the steps to make these amazing pancakes. 1st we will need to make the Pancake Mix Combination, this couldn’t be more simple, to make 24 protein pancakes we need 2 scoops of the MetRx Buttermilk pancake mix, put that into your measuring cup, then top it off at 3 cups with the Grainberry mix. By adding the protein powder your adding 36 grams of protein to your mix and each 4 1/2″ pancake yields almost 4 grams of protein.
Add the eggs, milk, and grapeseed oil. Whisk, and add fruit slices if you choose. Sprinkle in 2 liberal dashes of cinnamon powder, whisk for 20 seconds. Batter is ready. Using a tablespoon equally portion out batter onto the griddle, flip when the sides start to get golden brown.
More then likely your not going to go thru all 20 or so pancakes, the good news is your pancakes will actually be fluffier the next day after they’ve been refrigerated. Don’t ask me how, its a #truestory . Simply pour off the remains into the cup you have on the side, and seal the batter with plastic wrap. Now you have breakfast for 2 days, or make more batter and you’ve got a few days covered. Serve with your favorite pancake syrup, some eggs, and fruit, and you’ve got a rounded out and healthy breakfast for less time then it takes to get to the drive thru, pay, eat in your car, and feel bad about it
